3 celery ribs (diced)

1 bunch cilantro (fresh and chopped)

2 tablespoons balsamic vinegar

1 cup quinoa (uncooked)

1 pinch cayenne

1 lb firm tofu

1/2 bell pepper (red or whatever colour you prefer)

8 lettuce leaves (red or green)

1 garlic clove (small and minced)

1 tablespoon Dijon mustard

1/4 cup water

1 tablespoon nutritional yeast

1/4 cup tamari or reduced sodium soy sauce

For the Marinade

1 teaspoon honey
