5 cups Andouille sausage, or any pork sausage

4 cups shrimp, peeled

1/4 lb. butter

6 cups onion, chopped

3 cups bell pepper, chopped

3 stalks celery, chopped

3 Tbs. garlic, chopped

1/4 cup parsley, chopped

3 Tbs. whole basil

1/2 jalapeno pepper, seeded and chopped

1/4 cup Cajun seasoning

10 1/2 cups chicken stock

3 cups canned crushed tomatoes

1/2 small can tomato paste

1 small piece salt pork, chopped

pinch of ground red pepper

1 1/4 cups uncooked wild rice

3 3/4 cups uncooked white rice

1 green onion, chopped
