1 teaspoon ground cumin

4 cups yellow onions , coarsely chopped

2 cups de-fatted chicken stock

4 fresh garlic cloves , minced

1 1/2 lbs boneless skinless chicken breasts , medium-large dice

1 1/2 cups green bell peppers , coarsely chopped

1 teaspoon cayenne

3 bay leaves

1 (6 ounce) can tomato paste

1 1/2 cups hard apple cider (or dark beer or dry white wine)

1/4 cup chili powder

1 1/2 cups new mexico peppers, roasted, peeled, diced
