For the soup:

3 tablespoons olive oil, plus 1 tablespoon for cooking the chicken

1/3 medium onion, thinly sliced

2 to 3 cloves garlic, minced

2 tomatoes, diced

3/4 teaspoon salt

1 teaspoon dried oregano

6 cups chicken broth

12 ounces boneless skinless chicken, thigh or breast

For garnishes:

1/4 cup corn oil

6 corn small corn tortillas, cut into strips

1 teaspoon salt

2 large dried chiles, such as ancho or guajilo

Small handful cilantro leaves, chopped

1 avocado, cut into chunks

1/4 small head green cabbage, thinly sliced

1 cup chopped stemmed spinach
