1/2 cup canola oil + more to grease pan

1 teaspoon brown or yellow mustard seed (see Note)

5 fresh curry leaves (see Note)

1 medium yellow onion, diced small

1 teaspoon kosher salt

1 tablespoon minced ginger

1/2 teaspoon turmeric

4 medium Yukon gold potatoes, boiled, peeled and grated

4 ounces panir cheese, diced small (see Note)
