100.0g rice , rinsed

1.0 tbsp sesame seeds , toasted

1.0 tbsp soy sauce

6 dried shiitake mushrooms , soaked for 30 minutes in 400 ml chicken stock (or 6 fresh shiitake mushrooms)

1 x 200g vaccum pack cooked, peeled chestnuts (Merchant Gourmet do good ones)

150 g pumpkin , cut into chunks

2.0 tbsp mirin, sake or dry sherry
