Ingredients for 7 servings

2 cups whole wheat flour

1 & 1/2 teaspoons of yeast

Any type of flour for surface dusting

1 teaspoon course sea salt

1/4 teaspoon of a finer grain salt

1 tablespoon honey

1 tablespoon of olive oil (though I used sunflower)

1 cup warm water

1 teaspoon sugar

Preparation

1.

In a small bowl, place the yeast on top of the warm water with the teaspoon of sugar and let it rest for about ten minutes, until there is a foamy layer on top.

2.

Blend the flour and sea salt in a large bowl

3.

Add the yeast mixture to the flour/salt, along with the honey and oil of your choosing.

4.

Mix until a dough has formed

5.

Place the dough on a floured surface and knead for 5-10 minutes. Really put your back into it!

6.

Take the finer grained salt and sprinkle it onto the surface of the dough, then knead it into the rest of the dough.

7.

Clean your larger bowl and coat it lightly with oil.

8.

Place the dough in the bowl, cover with a lightly oiled plastic wrap, and set in a warm place to rise.

9.

Let the dough rise for an hour

10.

Punch the gas out of the dough and knead again for about a minute.

11.

Break the dough into 7 or 8 uniform circles

12.

With your hand, or a rolling pin if you want them to be really smooth, flatten the balls to your desired shape.

13.

Heat oven to 450 degrees Fahrenheit

14.

Bake for 7 minutes. Allow to cool slightly and enjoy!
