  • The Chicken:
  • One 3 1/2- to 4-lb fryer
  • chicken, neck and giblets removed
  • 3 Tbsps Smoky Barbecue Rub, divided (see recipe in article link)
  • One 12-oz can light beer
  • The Bourbon Butter:
  • 6 ozs butter, cut into small pieces
  • 1/4 cup brown sugar
  • 2 Tbsps bourbon
  • 1/2 lemon, juiced
  • 1 tsp kosher salt + salt to taste
  • 1/2 tsp freshly ground pepper
