1 cup plus 1 tbsp vegetable oil, divided

1 1/2 tsp kosher salt, divided, plus more as needed

6 cups all purpose flour, plus more as needed

1 large onion, finely diced (about 2 cups)

2 lbs ground beef

2 tsp dried oregano

1 tsp dried mint (optional)

1/2 tsp ground cumin

1/4 cup uncooked white rice

2 hard boiled eggs, peeled and finely diced

1/2 cup minced fresh flat-leaf parsley

1/4 cup sesame seeds, plus more for sprinkling

1/4 tsp freshly cracked black pepper

2 egg yolks lightly beaten with 2 tsp water, for egg wash
