1 small head cauliflower, cut into florets

3 tbsp olive oil

1 small onion, finely chopped

2 x cloves garlic, minced

3/4 tsp chili flakes

1/2 x small pointy cabbage, finely chopped

sea salt and black pepper

1/4 cup grated parmesan

1/3 cup ricotta

1 cup pasatta or simple tomato sauce

1 tbsp balsamic vinegar

2/3 cup creme fraîche

12 x cannelloni noodles

small bunch of basil leaves, torn

150 g ball of fresh mozzarella, sliced

olive oil, for drizzling
