Made this dish and it was absolutely awesome! Very fun to eat and the sweet chili sauce with the eggs in toast is a very good combo. One thing I had difficulty with was getting the right temperature where I can cook the eggs without burning the toast - very hard to find the balance. I recommend toasting one side of the bread on medium heat and when you flip it over turn the heat to low and then drop in the egg into the hole and cover the pan with a lid so it speeds up the egg cooking process.

My grandma has made these for me since I was little, has always called them eggs in a basket too though :) - sans the chili sauce as I did grow up in Central MN, afterall...

Down south, we call this eggs in a nest. I fixed one for my oldest grandgirl yesterday morning. I think she might be a new fan. :-)

A good knob of butter

1 tbsp olive oil

2 large free-range eggs

A little sweet chilli sauce, to serve
