1/2 cup barley

1 1/2 cups dried lentils

freshly grated parmesan cheese (optional)

1 (28 ounce) can crushed tomatoes

2 garlic cloves , minced

salt and pepper, to taste

2 carrots , chopped

3 stalks celery , chopped

8 cups broth

2 medium onions , chopped

1/2 teaspoon dried basil

1/2 cup dry red wine

2 bay leaves

1 (10 ounce) package frozen chopped spinach , thawed and squeezed dry or 1 cup chopped cooked greens
