3/4 cup extra virgin olive oil

4 garlic cloves, minced

Juice of 1 lemon (about 2 tablespoons)

1/2 teaspoon grated lemon zest

1 tablespoon minced fresh thyme leaves

1 teaspoon red pepper flakes

1/4 cup chopped parsley

1 fresh bay leaf, or 1/2 dried bay leaf

2 pounds boneless leg of lamb, cut into 1- to 1 1/2-inch cubes

3 or 4 tomatoes, halved

2 onions, peeled and quartered

2 poblano chiles, seeded and cut into 1-inch strips

4 rounds of pita bread, cut in half

Salt and freshly ground black pepper to taste

2 cups plain yogurt
