1 quart boiling water

1 tablespoon unsalted butter

1/4 cup cognac

Grilled bread, as an accompaniment

2 carrots, finely chopped, plus 1 carrot finely chopped

1/4 cup extra-virgin olive oil, plus 4 tablespoons
