Ingredients

STEAK AND VEGETABLES:

1 pound well-trimmed boneless beef top sirloin or top round steak, about 1" thick

4 cloves garlic, minced

1/2 teaspoon coarsely ground black pepper

1/4 teaspoon salt

1 large red onion, cut into 1/2"-thick slices, rings separated

1 teaspoon extra-virgin olive oil

1 teaspoon red wine vinegar

8 small red or white new potatoes, scrubbed and halved

SALAD:

2 1/2 teaspoons red wine vinegar

2 teaspoons extra-virgin olive oil

2 teaspoons flaxseed oil

1 1/2 teaspoons coarse dijon mustard

1 teaspoon water

1 small clove garlic, minced

1/4 teaspoon freshly ground black pepper

1/8 teaspoon salt

1 package (5 ounces) mesclun leaves or baby greens
