4 cups fish stock (see recipe), or 2 cups clam juice + 2 cups chicken


1/4 cup olive oil (not too strong)

1/2 cup finely chopped onions

2 garlic cloves, minced

1 cup arborio rice

1/2 cup dry white wine

Salt and pepper

1/2 bunch Italian parsley, coarsely chopped

Lemon slices

SEAFOOD: Add all or a selection of the following:

Clams or mussels in the shell, scrubbed

Shrimp or prawns, peeled, deveined

Squid, cleaned, bodies cut into rings, tentacles cut in manageable-size pieces
