4 dried shiitake mushrooms, rehydrated and sliced

4 cloves garlic, sliced

1 pound butternut squash, peeled, de-seeded and cubed

2 onions, halved and sliced

2 green onions, cut into 2 inch pieces

2 carrots, cut into 1 inch long chunks

1/2 cup soy sauce

1/2 cup mirin

1 tablespoon dark soy sauce

1 tablespoon gochujang* (optional)

2 tablespoons dark brown sugar

1 teaspoon sesame oil
