(Leftover) Turkey Or Chicken Pot Pie

I used all turkey stock, no milk or wine, and it came out delish. I also used prepared pie crusts instead of the puff pastry, because that was all I had. Was very, very good!

Ingredients for 4 servings

3 tablespoons butter, divided

3 carrots, washed & chopped into 1/4″ pieces

2 stalks celery, washed & chopped into 1/4″ pieces

1 leek, trimmed, washed and chopped

1 tablespoon fresh thyme

1/2 teaspoon salt

Freshly ground black pepper

2 1/2 cups cooked turkey or chicken meat

3.5 oz mushrooms, washed and chopped (I like using chanterelles)

1/2 cup white wine (you can substitute broth)

2 1/2 cups milk, divided

1/4 cup flour

Zest of 1/2 a lemon

2 sheets (or approximately 16 ounces) frozen puff pastry, thawed

1 egg, lightly beaten
