3 tbsp. finely chopped dill

2 tbsp. kosher salt

1 tbsp. ground white peppercorns

1 tbsp. sugar

1 skin-on, whole salmon fillet (about 2½ lbs.)

3 tbsp. aquavit or cognac

FOR THE BLINIS:

4 eggs

1 cup sour cream

½ cup flour

1 tsp. kosher salt

¼ tsp. baking soda

Crème fraîche and chopped fresh chives or dill, for serving
