1/4 cup pickling spices

1/4 cup cider vinegar

1/2 onion, peeled and chopped

The Pork

3 whole pork tenderloins, about 1 pound each

6 bamboo skewers

salt and freshly ground pepper

2 tablespoons olive oil

The polenta

6 cups water

1 1/2 teaspoons salt

1 1/2 cups instant cornmeal

2 tablespoons butter

2 tablespoons grated parmesan cheese

The Garnish

4 ounces pancetta, thinly sliced

1 teaspoon butter

The Sauce

1/2 cup heavy cream

3 ounces blue Castello cheese or Italian Dolcelatte Gorgonzola
