½ pint full-fat milk

2 medium onions , halved and very thinly sliced

4 cardamom pods , split

½ tsp turmeric

350.0g undyed smoked haddock

3.0 tbsp vegetable or sunflower oil

50.0g butter

1 medium onion , chopped

2.0 tbsp vegetable or sunflower oil

FOR THE KEDGEREE

about 14 fresh or freeze-dried curry leaves

handful of coriander leaves and some lime wedges, to serve
