2 teaspoons yellow curry powder

1 large yellow onion, cut into bite-size pieces

1 teaspoon minced garlic

2 teaspoons grated ginger

1/4 cup dry white wine

1 cup chicken stock

2 medium ripe mangos cut into medium cubes

1/2 pound snow peas or stringless snap peas

1 tablespoon Champagne or sherry vinegar or to taste

Salt and pepper to taste

1/2 cup sliced almonds, toasted

Cayenne pepper or hot sauce to taste (optional)
