a few slices of soda bread or toasted sourdough, to serve

2.0 tbsp Chardonnay vinegar (buy from Italian delis, or just use a regular white wine vinegar)

140.0g white crabmeat

1 tsp sugar

1.0 tsp each chopped chives and dill

good handful mixed baby salad leaves

5 tbsp olive oil

FOR THE DRESSING

1 orange , peeled, segmented and juices kept

2.0 tsp mayonnaise

1 tsp Dijon mustard
