I had to cook it about 20 mins longer to get the temp up there. Really yummy. I puréed some of the peach shallot mixture with the chicken dripping and made a kind of gravy. I was trying to figure out something that wasn't dessert for peaches and I will definitely make this again.

1 3 1/2- to 4-pound chicken

3 tablespoons olive oil

2 teaspoons kosher salt

1/2 teaspoon black pepper

4 peaches, quartered (peeled, if desired)

4 small shallots, halved

1 tablespoon balsamic vinegar

6 sprigs fresh thyme
