Ingredients for 5 servings

15 x Brandywine tomatoes

2 tsp Kosher salt

2 tbsp olive oil

3/4 cup carnaroli rice

1/4 cup orzo pasta

2-1/2 cups homemade vegetable stock, (or canned vegetable broth or water), warm

3 x cloves garlic, finely minced

1 x shallot, finely chopped

2 tbsp sun-dried tomatoes, finely chopped

2 tbsp sharp yellow cheddar cheese, diced

1 x yellow onion, finely chopped

1 cup frozen vegetable combination (peas, carrots and corn), thawed

2 tsp dijon mustard

1 tsp sugar

1 x lemon, zested and juiced

2 tbsp unsalted butter,softened to room temperature

3 x bhortbread cookies

3 tbsp curly parsley

2 tbsp parmesan cheese ground into fine powder

1-1/2 tsp salt

1/2 tsp black pepper, freshly ground
