  • 2 Tbsps dry sherry
  • 2 tsps red pepper flakes (more or less depending on taste)
  • 1 Tbsp fresh parsley , minced
  • 1 pinch salt & pepper
  • 1 tsp paprika
  • 6 garlic cloves , minced (more or less depending on taste)
  • 1/4 cup parmesan cheese , shredded and fresh (to taste, I used almost a 1/4 cup)
  • 2 Tbsps fresh lemon juice (approximately 1.5 lemons)
  • 3/4 lb medium shrimp , with the shells on (20-25/lb)
  • 3/8 cup Spanish olive oil
  • 8 ozs rotini pasta
