2 cups shallots , thinly sliced

1 cup onion , finely chopped

2 tablespoons unsalted butter

4 duck breasts

1/2 teaspoon fresh tarragon , minced

2 cups stock (I used duck but chicken would do)

2 tablespoons onions , chopped

1 1/2 cups dried tart cherries , unsweetened

1/2 cup almonds, toasted and chopped

1/4 cup balsamic vinegar

1/2 cup butter

1/2 teaspoon fresh sage , minced

pepper

1/2 cup white wine vinegar

1/3 cup celery , chopped

2 cups long grain brown rice , not instant

1/2 teaspoon fresh marjoram , minced

1/2 teaspoon fresh thyme , minced

1/8 teaspoon pepper

stuffing

1/2 teaspoon salt

3 tablespoons sugar

1/2 cup balsamic vinegar
