Ingredients for 6 servings

1/4 lb Corned Beef, thin cut

2 bottles Black and Tan beer or Stout

3 x carrots, peeled

3 x ribs celery, washed

1 whole onion, peeled

4-5 sprigs Italian, flat-leaf parsley

3 whole cloves

2 x Bay leaves

1 whole allspice

10 whole peppercorns

1 1/2 tsp mustard seeds

1 x head green cabbage, cored and cut into 6 wedges

1/2 lb leeks, well rinsed and using the white parts along with about 1 ½ inches of the tender green stem

6-8 x carrots, peeled and cut into 2-inch slices

1-2 x parsnips, peeled and cut into 1½ inch slices

6 medium size Yukon Gold or Red Bliss potatoes, unpeeled and cut in ½

12 oz jar peach preserves

1/2 cup brown booze

1/4 tsp ground ginger

1 1/2 tbsp Dijon-style mustard
