6 chicken leg quarters (about 5-1/4 lb. total), excess fat removed

1/2 tsp. ground nutmeg

4 heaping tsp. whole allspice berries

6 cloves garlic

14 whole cloves

2 Scotch bonnet chiles (or 2 habaneros), cores, seeds, and ribs-removed

1-1/2-inch piece fresh ginger (about 1 oz.), washed (but not peeled) and sliced

2 medium onions, roughly chopped

1/2 tsp. ground cinnamon

1 Tbs. freshly ground black pepper

4 scallions (white and green parts), roughly chopped

3 tsp. vegetable oil

1 tsp. fresh thyme leaves, lightly chopped

2 Tbs. kosher salt
