I like to be quick and simple, yet delicious..I take fresh salmon, place it in a square of tin-foil, with just a tad olive oil, top it with fresh spinach and feta cheese, some minced garlic and fresh grnd black pepper to taste...close it up and pop it in the oven to bake. (temps vary depending on ovens)

Ingredients for 4 servings

4 skinless salmon fillets, (6 ounces each)

Coarse salt and ground pepper

1 tablespoon olive oil

2 bags (5 ounces each) baby spinach

1/2 cup feta, crumbled (2 ounces)

1/3 cup pine nuts

2 teaspoons fresh lemon juice
