Tomato Sauce With Pancetta

I used Trader Joe's already chopped pancetta as a shortcut

Ingredients for 4 servings

4 cloves garlic

3 tbsps olive oil

3 leaves basil

1 28 oz can tomatoes

dash pepper

dash salt

4 oz pancetta

Preparation

1.

Heat the olive oil in a large saucepan over low heat add chopped garlic

2.

Sauté garlic until just brown and add 2 basil leaves

3.

Stir for a minute and add the can of tomatoes.

4.

Turn To high and bring sauce to a boil. turn to low season with salt and pepper

5.

In a separate saucepan sauté 4 ounces pancetta until just crispy

6.

Drain grease from pancetta, add to sauce, mix and serve
