12 ounces (350 g) jalapeño peppers, stemmed, seeded, and deveined

2 cups (500 mL) apple cider vinegar, divided

6 cups (1.05 K)granulated sugar

2 pouches (each 3 ounces/85 mL) liquid pectin

a couple drops of green food coloring (optional, I don’t do it)
