1 pound of raw, deveined shrimp (I also butterfly mine)

1 cup flour

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil

1 mango, peeled and sliced into matchsticks

1 bunch of bibb lettuce or rainbow chard leaves

2 seedless cucumbers, peeled and chopped

1 avocado, peeled, pitted and chopped

1 bunch of cilantro

12 rice paper wrappers (optional)

1 cup chopped fresh cilantro leaves

2 garlic cloves, minced

2 tablespoons rice wine vinegar

1 tablespoon fresh lime juice

1 tablespoons sweet chili sauce

2/3 cup olive oil
