3 pounds mild or spicy Sicilian sausage (New York-style preferred)

4 tablespoons olive oil + more as needed

2 cups diced celery

3 cups diced yellow onion

6 cups sliced cremini mushrooms

1/4 cup dry red wine

1/2 loaf Acme sourdough batard, in 3/4-inch cubes

3 cups turkey or chicken stock

1 tablespoon each: chopped fresh parsley, thyme and sage

1 ounce dried porcini mushrooms, rehydrated in hot water

-- Salt and pepper to taste

1/2 cup dried cranberries

1 1/2 cups roasted chopped hazelnuts
