4 x green cardamom pods, slightly crushed

3 tbsp canola oil (or any neutral oil), as needed

1 x yellow onion

2 1/2 cup fresh black eyed peas

2 cup baby spinach leaves, coarsely chopped

2 tbsp ginger garlic paste

1 clove garlic, finely minced

1/4 cup apple cider vinegar

1/3 cup plain yogurt

1 x bay leaf, torn in half

1/2 tsp cumin seeds

1/2 tsp garam masala

1/4 tsp red chili powder, to taste

1 1/2 tsp salt, as needed

3 tbsp grapeseed oil (or olive oil), as needed

2 tbsp cilantro chopped
