400.0g thick, dried, flat rice noodles (banh pho), we used Thai Taste rice noodles from Waitrose

2.0 tbsp fish sauce

juice 1 lime

200.0g raw prawns , peeled

1.0 tbsp sugar

1 bunch spring onions , sliced on the diagonal

85.0g pickled turnips , chopped (optional)

50.0ml vegetable oil
