1 cup creme fraiche 1 teaspoon smoked paprika

1/2 teaspoon kosher salt

The latkes:

1/2 teaspoon cumin seeds

1/2 teaspoon fennel seeds

1/2 teaspoon smoked paprika

1 teaspoon kosher salt

1/2 pound zucchini

1/2 pound Yukon gold potatoes, peeled

1/2 large onion

3/4 pound spinach, rinsed and finely chopped

2 eggs

1/2 cup flour

Kosher salt and ground black pepper, to taste

Vegetable oil, for frying

Lemon wedges, for serving
