Ingredients for 6 servings

2 cloves garlic, smashed

1 medium yellow onion, diced

2 jalapeno or serrano chilies, seeded and chopped

1/2 cup loosely packed cilantro leaves

2 tablespoons olive oil

2 teaspoons ground coriander

1 teaspoon groud cumin

2 teaspoons salt

2 1/2 pounds tomatillos, halved

1 cup green pumpkin seeds (pepitas), optional

3 cups good quality chicken stock, or water

3 cups shredded chicken

1 cup shredded monterey jack cheese

12 corn tortillas (the freshest you can find)

3/4 cup Mexican queso fresco, crumbled (a mild feta works if you can't find this)
