Ingredients for 6 servings

white vinegar

juniper berries (I omitted)

paprika (I used about 2 1/2 T)

extra-virgin olive oil

1 cup dry red wine

1 bay leaf

cinnamon (I used 1/2 tsp & will a little less next time)

1 tablespoon peppercorn

3 tablespoons breadcrumbs (I used gluten-free bread)

salt & freshly ground black pepper

Brine

1 golden delicious apple , chopped

1 capon, about 6 to 8 pounds (mine was 4 1/2 lbs)

2 gallons cold water

1/2 lb chestnuts , boiled and peeled (I also broke mine apart coarsely)

3/4 cup sugar

1 cup kosher salt

2 lbs white pearl onions, peeled

3/4 lb potato , peeled and diced

2 tablespoons butter
