1 pound shaped pasta (farfalle, rigatoni, gemelli, campanelle, pennette, whatever), cooked al dente

3 or 4 tablespoons olive oil

1 medium to large onion, chopped

3 or 4 tablespoons garlic, minced

2 carrots, grated

1 medium to large green pepper, chopped

1 (28 ounce) can crushed tomatoes

1 (15 ounce) can chunky crushed tomatoes or tomato sauce

1 (15 ounce) can red beans, cannelini beans, or black beans

1 (7 ounce) can mushrooms (optional)

1 (2.25 ounce) can black olives (optional)

10 ounces frozen chopped spinach, thawed

8 ounces grated cheese (Italian blend or Mexican blend or sharp cheddar)

2 tablespoons balsamic vinegar

1 tablespoon oregano

1 tablespoon basil
