3 tablespoons rapadura sugar

2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg 3/4 teaspoon salt

1 1/3 cups whole milk (or hemp milk, or buttermilk)

1 cup pumpkin puree (canned or drained fresh)

4 large eggs, separated

1/4 cup unsalted melted butter (or virgin coconut oil)

1 teaspoon vanilla extract

1/2 cup chopped pecans
