6 sprigs fresh thyme

Salt and freshly ground black pepper

1/4 cup extra virgin olive oil + more for garnish

2 tablespoons chopped


1 tablespoon chopped fresh sage

Scant 1/4 teaspoon hot red pepper flakes

1/2 pound ripe tomato, peeled, seeded and finely diced

1 pound dried cavatelli or gnocchi pasta
