2 medium-sized butternut squash (about 4 3/4 lb. total), halved lengthwise and seeded

2 Tbs. vegetable oil

2 cups thinly sliced onion

1 Tbs. light brown sugar

4 tsp. minced ginger

2 cloves garlic, minced

6 cups vegetable stock

1 cup apple cider

Salt and black pepper to taste
