3/4 cup lentils, preferably small french lentils, picked over and rinsed

3 cups water

1 clove garlic, minced

1 bay leaf

1/4 teaspoon ground black pepper

pinch of kosher salt

1 large tomato, chopped (8 ounces)

1/4 cup slivered fresh basil leaves

2 scallions, thinly sliced

2 tablespoons fresh lemon juice

1 tablespoon olive oil

salmon:

1 1/4 pounds skinned salmon fillet

1 large clove garlic

1/2 teaspoon kosher salt

1 tablespoon fresh lemon juice

2 teaspoons olive oil
