5 egg yolks

1 cup milk

1/2 teaspoon ground cinnamon

3 cups heavy cream

1 cup light brown sugar

2 cups crumbled pralines, recipe follows

1/2 pound light brown sugar (1 cup plus 2 tablespoons)

2 cups Anglaise Sauce, recipe follows

Pinch salt

1/2 cup sugar

1 vanilla bean split and scraped

1 teaspoon pure vanilla extract

Pinch nutmeg

1 tablespoon butter

1 1/2 teaspoons butter
