1 medium Butternut squash (about 3 cups, mashed)

Sea Salt and fresh cracked Pepper

olive oil

2 large yellow onions, thinly sliced into rings

3 cloves garlic, minced

15 oz ricotta Cheese

8 oz mozzarella, shredded

1 egg

1/4 cup milk

2 tbsp butter

2 tbsp flour

2 cup whole milk

1 tsp nutmeg

1 tsp dried thyme

1 tsp fresh sage, chopped or 1 teaspoon dried

1 tbsp fresh basil, chopped or 1 teaspoon dried
