900.0g whole piece of rindless, unsmoked back bacon

3 potatoes , boiled and mashed

50.0g butter

FOR THE POTATO CAKES

1 medium egg yolk

3 tbsp clear honey

1 heaped tbsp plain flour

8 cherry tomatoes

chopped parsley , to serve

200.0ml double cream

2 leeks , trimmed, green and white parts separted and both finely sliced

3 tbsp double cream

FOR THE COLCANNON SAUCE

small knob of butter

4 tbsp white wine

5 Savoy cabbages leaves, finely shredded
