1 1/2 cups chopped onions

3 garlic cloves, minced or pressed

2 Tbs. olive oil

1 Tbs. grated fresh ginger

1 tsp. fresh thyme or 1/2 tsp. dried

1/2 tsp. ground allspice

4 1/2 cups drained, cooked black beans

3/4 cup orange juice

Salt and freshly ground black pepper to taste

This sauce is at once sweet, sour, spicy and pungent.

2 medium-sized ripe mangoes

1 small cucumber, peeled, seeded and diced

1 ripe tomato, chopped

Juice of 1 lime

Pinch salt

1/2 to 1 small fresh chile, minced, or hot pepper sauce to taste

1 Tbs. chopped fresh coriander, optional
