Salt to taste

6 x Tomatoes, medium-size, ripe but firm

1/2 cup mixed chopped fresh herbs, such as parsley, dill, mint, chives, chervil and basil

1/4 cup Toasted Pine nuts

3/4 tsp Cinnamon

2 tbsp Extra Virgin Olive Oil

1 cup Yogurt thickened or thick Greek yogurt

2 x cloves garlic (to taste)

1 tbsp chopped fresh mint
