Ingredients for 4 servings

12 oz dry penne or macaroni pasta- we used Tinkyada Brown Rice Penne

4 tbsp chopped pickled jalapeƱos, to taste (we used 4 - we like it spicy)

2 tbsp light olive oil or butter

2 tbsp sweet rice flour (or all-purpose gluten-free flour)

2 1/2 cup Milk

1 1/2 cup shredded aged sharp or mellow cheddar cheese

3/4 cup small curd cottage cheese

1/2 tsp Sea Salt

1/2 tsp Dijon or honey mustard

1/4 tsp freshly grated nutmeg

2 tbsp dry sherry or white wine, to taste

1 cup Crunchy Gluten-Free "Bread" Crumbs - for topping

12 x grape tomatoes, halved

A sprinkle of dried basil and parsley
